Breaking out the crock-pot, part 1 Apr 25

I wanted to share with you all what I cooked in the crock-pot this week...and the recipes, just in case you are handy with your crock-pot.

On Wednesday night, I did Southwest Chicken fully knowing that Aaron most likely would not be home for dinner that night but just wanted so bad to get out the crock-pot ( I know. I may be a bit too eager.). Here's the recipe...

  • 2 cans corn, drained
  • 1 can of black beans, drained and rinsed
  • 16 oz. jar chunky salsa, divided
  • 6 boneless, skinless chicken breasts halves (I never figured out what that really meant so I just split the chicken breasts...you can tell me really what that meant if you know)
  • 1 Cup low-fat shredded cheese
  1. Combine corn, black beans, and 1/2 Cup of salsa in crockpot
  2. Top with chicken and pour remaing salsa over chicken
  3. Cover. Cook on high 3-4 hours or on low 7-8 hours
  4. Sprinkle with cheese. Cover 5 minutes for cheese to melt

So, you're wondering how it turned out? Well, it looked really good (4 stars for looks); it was super easy to make (4 stars); and it tasted...um, pretty good, maybe a bit bland and it definitely needed a "kick" to it as Aaron would say (don't worry, he didn't say it a/b this dish but he always says that when he's cooking)...any ideas? I thought maybe rotel or something over it (so...3 stars for taste). Overall, I'm definitely making it again and that's what really counts.

Tonight we had a Clear Function cookout and Aaron grilled out, so I made Easy Baked Beans using the C-P.

  • 2 16 oz cans baked beans
  • 1/4 Cup brown sugar
  • 1/2 t. dried mustard
  • 1/2 Cup of ketchup
  • 2 small onions, chopped (I used just 1)
  1. Combine all ingredients in C-P. Cover and cook on high for 2 hours

Alright, this was the winner of the week. Now I'm not a big baked beans fan but you always need a good recipe for beans especially with those summer cookouts coming, right? Here is that recipe...4 stars all around!

Next week's tries? Hmm....it's suppose to be a bit cooler so maybe I'll try the Chicken Tortilla Soup before it gets so blazing hot in Memphis that the thought of soup disgusts me, which I may be already at that point so it may be the Delicious Spaghetti Sauce. Ahh...life with the C-P is so adventerous, is it not? Either way, you'll be in the know on what I do try. Happy C-P cooking!

I wish I could cook that easy right now. I will love my crock pot like no other when I get back and canned food. Already cleaned!!!

fun! i'll have to hold on to both of those recipies. I tend to go in waves with my crockpot...i'll bring it out and cook with it for a week and then back into the cabinet it goes. I really like a cookbook I have called "Fix it and Forget it"..you've probably heard of it but it has a lot of easy (under 5 ingredients!) crockpot recipies and then some more complicated ones too.

Hey Laurin, I have this cookbook called "Fix it and Forget it" that has tons of crockpot recipes. I love it and use it a lot. It's pretty much the only way I can cook when I'm working full time. Keep the recipes coming, and let me know if you want to see my cookbook.
